Chow mein are Chinese stir-fried noodles with vegetables and sometimes meat or tofu. Over the centuries, variations of Chaomian were developed in many regions in China; there are several methods of frying the noodles and range of toppings can be used.

Steps
- firstly, in a large vessel take water.
- add 1 tsp salt, 3 tsp oil. get the water to a rolling boil.
- now add 3 pack noodles and dip completely.
- boil for 3 minutes, or refer to package instructions to know the cooking time.
- separate the noodles and drain off.
- rinse with cold water to stop cooking and turning noodles mushy.
- firstly, in a small bowl take 1 tsp corn flour, 1 tsp chilli powder, ¼ tsp cumin powder and ¼ tsp coriander powder.
- also add 1 tsp sugar, ¾ tsp salt, 2 tbsp soy sauce and 2 tbsp vinegar.
- further, add 2 tsp oil and ¼ tsp pepper powder. traditionally, sesame oil and oyster sauce is also added.
- mix well making sure there are no lumps, chowmein sauce ready.
- firstly, in a large wok, heat 2 tbsp oil and stir fry 3 clove garlic, 1 inch ginger and few spring onion.
- add ½ onion, ½ green capsicum, ½ red capsicum, ½ carrot and ½ cup cabbage.
- stir fry until the vegetables shrink yet remain crunchy.
- make sone space in the centre and pour the prepared sauce.
- stir fry on high flame for a minute until everything is well combined.
- also, add ½ cup cabbage and stir fry.
- further, add boiled noodles and give a good toss.
- make sure the spices are well combined with noodles.
- finally, add more spring onions, and enjoy veg chowmein.
